I’ve been on a bit of a health kick lately. Going swimming more often and doing weight training a few days a week to get myself into shape. So along with that, I’ve been trying to eat a little more healthy. One thing I noticed since going vegetarian is that my protein intake is a little low. I eat all the alternatives like Quorn…etc. However, when it comes to the sweet treats, there isn’t really anything that’s healthy and vegetarian. So, I tried to come up with tasty recipes of my own that contain the protein i’m lacking. This is where these Chocolate & Coconut Protein Balls come in.
For a while I was buying the really expensive protein balls. At almost £2 per ball, it’s expensive for what it is. Plus, most people can’t afford to spend that much on healthy snacks. I figured, how hard can it be to try to replicate something similar to these. After a few tries, here is my finished recipe. If I say so myself, they taste great!
They’re so simple to make and all you need is a food processor and some scales, thats it! Another reason I really wanted to get making something in the kitchen was because I was recently sent these gorgeous retro style scales from Red Candy and was itching to get them out for a test run. What do you think, I love them! This one is currently only £25 and is awesome! They are really good quality and sturdy and look great sitting out on the worktop. I get the majority of my ingredients from Indigo Herbs as they are really good quality, such good value for money, much cheap than most places and they have such a huge variety to choose from so you don’t have to go to numerous places to get all your bits.
Ingredients
- 100 Grams Coconut Flour
- 250 Grams Pitted Mejool Dates
- 1 1/2 Tablespoons Cocoa Powder
- 2 Tablespoons Organic Agave Syrup
- 2 Tablespoons Chocolate Peanut Butter Powder
Method
- Stick it all in a really good blender or food processor and mix until everything has combined. You may have to stop half way through to get the bits down from the sides to make sure everything has been mixed in together properly.
- Put the mixture into the fridge overnight if possible, or at least for 1 hour before making the balls.
- The mixture should make about x18 balls and each ball should weigh approximately 26 grams. Roll in to balls with your hands and put back into the fridge until you want to eat one. To make them look super pretty, you can roll the balls in any left over coconut flour or cacao powder.
