The Dates
The most important thing to consider when making these energy balls are the dates you use in your recipe.
Try to use the freshest dates possible. The dried ones in packets at the supermarkets tend to make your finished ball more dry. You should be able to find them somewhere in the fresh fruit and vegetable section a your local supermarket.

How To Make Your Coconut Energy Balls
Making these energy balls is a lot easier than it looks. The balls you see in the photos have been adjusted to look their best – generally, they look a lot less put together. However, they always taste amazing, no matter how odd they might look. Let’s be honest, who has the time these days to create the perfect looking ball every time!
Blend the pitted dates, along with the soaked, dried cranberries or raisins with x4 tablespoons of warm water in your high speed blender and once smooth, place in a large mixing bowl.
In a separate bowl, mix together all of your dry ingredients (excluding the coconut) until well combined.
Then add in all of the mixed dry ingredients (except the coconut) and combine until you have dough like mixture.
Then roll your dough into balls and place out to one side.
Place your desiccated coconut into a wide bowl or dish and roll your balls in the coconut until completely covered.
Once covered, place your protein balls in the fridge and eat as and when.

How To Store Your Energy Balls
You can either store your balls on the counter, in the fridge or in your freezer.
Personally, we keep ours in the fridge as they never last long enough to need to go in the freezer.
However, if you do keep them in the freezer, make sure you freeze them spaced out on a baking sheet first to ensure they don’t all freeze together. Then after about 20 minutes, you can store them in the freezer altogether.
These protein balls should last in the fridge for up to 5 days in an airtight container, or 1 month in the freezer.
We hope you love these Coconut Protein Energy Balls as much as we do! What flavour combination would you go for?
