Coconut Protein Energy Balls Recipe

Ingredients
  

  • 100 grams Pitted Dates (approx 15 Medjool)
  • 1 teaspoon Maca Powder (Optional)
  • 40 grams Dried Raisins (Soaked)
  • 10 grams Cacao Powder
  • 25 grams Desiccated coconut
  • 80 grams Almond Flour (Almond meal or ground almonds work too)
  • 30 grams Chocolate Protein Powder
  • 10 grams Flax Meal
  • 30 grams Mini chocolate chips/flakes

Instructions
 

  • Blend the soaked pitted dates and dried cranberries or raisins with x4 tablespoons of warm water in your blender until smooth.
  • In a separate bowl, mix together all of your dry ingredients (excluding the coconut) until well combined.
  • Then add in all of the mixed dry ingredients (except the coconut) and combine until you have dough like mixture.
  • Then roll your dough into balls and place out to one side.
  • Place your desiccated coconut into a wide bowl or dish and roll your balls in the coconut until completely covered.
  • Once covered, place your protein balls in the fridge and eat as and when.
