Oatmeal & Raisin Cookies (Vegan)

This healthy oatmeal cookie recipe is a staple treat in our home, made almost daily they're that good!
A simple one-bowl recipe you can make and bake from scratch within 15 minutes - you don't even need a food processor!
A great choice when you fancy a sweet treat, filled with natural sweetness.
They are also made using oat flour instead of all purpose flour - although you can use either depending on your dietary preferences.

Ingredients
  

  • 80g Raisins
  • 60g Coconut Sugar (Or 1 tablespoon of unsweetened applesauce with a dash of maple syrup)
  • 30g Coconut Oil
  • 60 mls Almond Milk (Or Water)
  • 100g Oat Flour
  • 100g Old-fashioned oats
  • 1/2 teaspoon Bicarb Soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Nutmeg (Pumpkin pie spice also works well if you have this)
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract

Instructions
 

  • Heat the oven to 180 C
  • Combine all the dry ingredients into a large bowl and make a well in the middle
  • Add all the wet ingredients (including the dried fruits) into the well in the middle and mix lightly. The easiest way to do this is to combine with a wooden spoon
  • You can make these cookies immediately once mixed. Simply spoon out the cookies onto the prepared baking sheet, leaving space for them to get bigger in the oven
  • Bake for 7-8 minutes. They will still look slightly undercooked but you want that for the more chewy cookie texture
  • Leave to cool completely on the parchment paper, or at least room temperature, on the cookie sheet, and enjoy!
