This healthy oatmeal cookie recipe is a staple treat in our home, made almost daily they're that good!A simple one-bowl recipe you can make and bake from scratch within 15 minutes - you don't even need a food processor!A great choice when you fancy a sweet treat, filled with natural sweetness.They are also made using oat flour instead of all purpose flour - although you can use either depending on your dietary preferences.
60gCoconut Sugar(Or 1 tablespoon of unsweetened applesauce with a dash of maple syrup)
30gCoconut Oil
60mlsAlmond Milk (Or Water)
100gOat Flour
100gOld-fashioned oats
1/2teaspoonBicarb Soda
1teaspoonCinnamon
1/2teaspoonBaking Powder
1teaspoonNutmeg(Pumpkin pie spice also works well if you have this)
1/2teaspoonSalt
1teaspoonVanilla extract
Instructions
Heat the oven to 180 C
Combine all the dry ingredients into a large bowl and make a well in the middle
Add all the wet ingredients (including the dried fruits) into the well in the middle and mix lightly. The easiest way to do this is to combine with a wooden spoon
You can make these cookies immediately once mixed. Simply spoon out the cookies onto the prepared baking sheet, leaving space for them to get bigger in the oven
Bake for 7-8 minutes. They will still look slightly undercooked but you want that for the more chewy cookie texture
Leave to cool completely on the parchment paper, or at least room temperature, on the cookie sheet, and enjoy!
