This simple & healthy vegan apple crisp recipe is the perfect fall dessert. It's quick to make and can be made on even the smallest of budgets.Enjoy it with a scoop of vegan ice cream, plant-based custard, a drizzle of cream, or even on its own.
Core your apples and cut them into thin slices and place into a large bowl.
Then add the rest of the filling ingredients in with your apple slices and mix until well combined.
Place your apple mixture into a baking dish and spread out the apple layer evenly.
The Topping
To create your crispy topping, place all of the topping ingredients into a large mixing bowl.
Chop your pecan nuts and add to the dry ingredients.
Then pour the melted coconut oil over the dry ingredients. Rub in the oil to create a crumble texture - a bit like rubble.
Once you have your crumble consistency, sprinkle over the sliced apples. Don't press the topping down as this is how you will get a crisp topping.
Bake for 50 minutes or until the topping has turned golden brown.
Once baked, leave to cool slightly for 5 minutes and serve!
Notes
Cooking apples or granny smith apples work the best in this recipe if you like a strong apple flavour wth a slight tartness. However, if you just want a super sweet dessert then braeburn, golden delicious or cox apples work perfectly for added sweetness.
