Crispy Homemade Baked Potato Wedges

These baked potato wedges are so easy to make and can be adapted to suit your taste.
All you need is a jacket potato, oil and a few spices. They taste so much better than store bought alternatives and aren't covered in unhealthy fats and preservatives.
Great as a snack, a main meal or even as a side dish.

Ingredients
  

  • 1 Large Jacket Potato
  • 2 tablespoons Olive Oil

Spice Mix

  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt & Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Instructions
 

  • Preheat oven to 200 C
  • Cut the potatoes in to 2 halves, leaving the skin on, and lie the flat edge on a chopping board.
  • Then create the wedges by cutting each potato half into 4 or 5 wedges. Don’t make the wedges too thin as they will burn in the oven.
    Dab the potatoes with paper towels to take away any excess moisture. This will help them to become crispy potatoes once cooked.

  • Place your wedges into a large bowl and drizzle with olive oil. Don’t drown them in oil as this will prevent them from becoming crispy.
  • Lay out all the wedges on to a baking tray in a single layer to ensure they cook properly.

  • Place into the oven on the top shelf for 50 minutes, or until golden brown on the outside and fluffy in the middle.
  • Leave to cool slightly on the baking tray before eating.

Spice Mix

  • Into a small bowl, combine the garlic powder, salt & pepper, paprika, onion powder and garlic powder and give it a good mix.

  • Sprinkle the spice mix over the wedges and leave to sit for at least 5 minutes for the flavour to get in to the wedges. (Once you have done this, go back to step 5 and continue).
