How To Make Them Crispy
We all love a crispy potato wedges that – there’s nothing worse than having a soggy, pliable potato! To make your potato wedges crisp all you have to do is not par-boil them before putting them in the oven.
However, if you do, make sure that every drop of water has gone from your potato wedges before you put them in the oven.

Another way to prevent potato wedges from getting soggy is to use a cooking spray oil on them. You want enough to cover them and stop them from sticking, however, you don’t want them to be dripping in oil.
The drier they are when they go in, the crispier they will be when they come out.
These crunchy potato wedges are perfect for baking in the oven or in an air fryer for a crispy exterior and fluffy interior. Here’s how I make homemade wedges that are perfectly crispy on the outside, yet still fluffy in the centre.
How To Make Home Made Wedges
Preheat your oven to 200 C.
While your oven is heating up, cut the potatoes into 2 halves, leaving the skin on and quickly dunk them into a bowl of cold water. Then lie them flat edge on a chopping board.
Then create the wedges by cutting each potato half into 4 or 5 wedges. Don’t make the wedges too thin as they will burn in the oven.
Dab the potatoes with paper towels to take away any excess moisture. This will help them to become crispy potatoes once cooked.
Place your wedges into a large bowl and drizzle with enough oil. However, don’t drown them in oil as this will prevent them from becoming crispy.
Lay out all the wedges on to a baking tray in a single layer to ensure they cook properly.
Place into the preheated oven on the top shelf for 50 minutes, or until golden brown on the outside and fluffy in the middle.
Leave to cool slightly on the baking tray before eating.
The Spice Mix
Into a small bowl, combine the garlic powder, salt & black pepper, paprika, onion powder and garlic powder and give it a good mix.
Sprinkle the spice mix over the wedges and leave to sit for at least 5 minutes for the flavour to get in to the wedges. (Once you have done this, go back to step 5 and continue).
Personally, we love them with a little smoked paprika as it adds a lovely smokey flavour to the baked potato wedges. However, it really isn’t necessary if you aren’t a fan.
Perhaps you might prefer a slight curry taste to your wedges. If so, simply add a sprinkling of cumin instead of paprika. Or, you could go for a more herby flavour by adding an Italian seasoning.

Of course, you can also change the oil to something different if you wanted to. Perhaps sunflower oil, or even avocado oil. It probably wouldn’t be best to use something like coconut oil as this would give them a much sweeter taste.

- 1/2 teaspoon Salt & Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder

Recipe Notes
Cheesy Wedges
You could even add a little nutritional yeast to your potato wedges which will give them a hint of cheese. It also creates an added crunch to the outside of your wedges as they get crispy in the oven. Plus, what a great way to level up your baked potato wedges. It’s such a crowd pleaser and takes seconds to do.
To do this, all you need to do is sprinkle some nutritional yeast on to your wedges before baking them, after you have laid them out on to the baking tray.
However, if you do this, make sure you lie the wedges onto a baking sheet, or parchment paper so they don’t get stuck to the tray.
Then place them in the oven as you normally would and wait for them to become crispy, fluffy, delicious potato wedges.
Of course, if you aren’t following a vegan or vegetarian lifestyle, you could sprinkle a bit of parmesan cheese on top before you place them into the oven.
Make Them Ahead Of Time
You can cook these ahead of time if you wanted to. If you aren’t going to eat them right away, leave them to cool completely so they don’t sweat and go soggy. Then, just before you want to eat them, put them back in the oven for 10 minutes to warm up again.
Also, depending on how big you cut your wedges, the cooking time can be between 30 minutes – to 45 minutes.
French Fry
You can even make these home made wedges into french fries if you’d rather have something smaller or need them to cook faster. To do this you simply need to cut each potato into small sticks, instead of wedges. French fries would be a great side dish to vegan or veggie burgers!
These french fries should take around 20 minutes to cook – perfect if you’re short on time. Plus, french fries make a great side dish, especially if you team them up with some garlic and onion dipping sauce!
Or, swap out your potatoes for sweet potatoes to make yourself some extra tasty sweet potato fries. Slightly healthier and so yummy!
