With the warmer, Spring weather on it’s way, it’s time to start thinking about picnics and tasty salads. Making the most of the sunshine with friends. Whipping up delicious platters for everyone to enjoy. The last thing you want is to be stuck inside in the kitchen cooking while everyone else is enjoying the sun. One of my go to picnic recipes is this Simple Couscous Salad. I’ve been trying to come up with speedy, yet tasty recipes to whip up on cue. This one is ideal, especially if you’re a vegetarian or vegan, or just want something light yet filling.
Of all the speedy recipes i’ve been making lately, this one has to be a favourite. Plus, it seems to be a hit with adults and children so you don’t have to make more to suit the fussy eaters. Oh and an added bonus is that this one is super cheap to make!
Ingredients
- 1 Pack of Couscous
- Handful of fresh mint leaves
- 1 Large Carrot
- 2 Large vine tomatoes
- Feta Cheese
- Olive Oil
- 1 Lemon
Method
- Open the pack of couscous and do as instructed on the packet. Once the couscous is ready to go (after about 5 minutes), place the couscous in the fridge until cold.
- Grate the carrot using the thicker grater (not the super thin grate) and add to the couscous once cold.
- Sprinkle feta cheese over the grated carrot.
- Chop up the fresh mint leaves and vine tomatoes and add to the mixture.
- Finally add a small dash of olive oil (enough to go round the bowl once), slice the lemon in half and add half the lemon juice to the bowl.
- Stir the mixture together and eat!
