If you’d even asked me what a spiralizer was a couple of months ago I wouldn’t have had a clue! However, it’s now one of my best friends in the kitchen. It can make really boring salads into something so delicious. My main issue with eating salads was that they’d never fill me up. Plus, they were always just so boring! Having the same old thing over and over again, my tastebuds were screaming out for more. I was actually sent my Spiralizer as a gift but it stayed in the box for months. It wasn’t until a rainy day that I felt inspired to try it out that it even came out of the box. Yet now i’m addicted to my making these Creamy Avocado Noodles.
Over the last few months I’ve come up with a number of delicious recipes. Recipes that are super healthy, filling and most importantly, really tasty too and. This one is my absolute favourite.

Not only is this recipe so good for you in every way, it’s also Raw Vegan. So if you’re looking to try some Raw Vegan or vegetarian dishes, maybe start with this one as it’s really simple and so delicious. It’s also pretty cheap to make incase you are on a budget. I think it’s so important to eat healthily when you can. Yes I do still eat a lot of junk food but I also eat well too and I can really feel the difference when I have eaten good, healthy food.
So here goes, I hope you like it as much as I do! This recipe will make enough for one person so if you want to make this for more people, you can adjust the quantity as required.
Ingredients
- Two large Courgettes (Zucchini if you are in the US)
- One large Avocado
- Handful of Pine Nuts
- One Lemon
- Thumb of garlic
- Handful of fresh Basil leaves
- Handful of fresh Parsley
Method
- Using your spiralizer, make your noodles using the Courgettes (Zucchini’s)
- Once you have made the noodles, leave to one side and start making your sauce.
- Add the rest of the ingredients into a blender and add the juice of the lemon (do not put the whole thing in!) and mix.
- Once you have a creamy consistency, pour the mixture over the noodles and give it a good stir.

This Creamy Avocado Noodles recipe really is that simple to make and it’s so healthy, tasty and filling. Lately i’ve been enjoying adding mushrooms to it, and some crispy vegan bacon strips to it as well for an extra bit of protein, bite and crunch! Or even tearing off a bit of this homemade baguette to dunk in the sauce.
