These truffles are made without using medjool dates, or full-fat coconut milk as we know a lot of you aren’t a fan of using these additional ingredients.

Main Ingredients You’ll Need
- Cacao Butter
- Coconut Oil
- Ginger Biscuits
- Ground Ginger
- Maple Syrup (agave syrup also works well)
- Cacao Powder (you can use cocoa powder instead but they won’t have the same depth of flavour)
- Sea Salt
- Chocolate Chips (optional)

How To Make This Easy Vegan Truffles Recipe
Heat a pan of water on the stove on a medium heat and place a heatproof glass bowl over the top.

Start by finely chopping your cacao butter into very small chunks and place into the double boiler (bowl on top of the pan on the stove), along with the coconut oil and allow them to melt completely. If you are adding in chocolate chips, do so at this point and allow to melt fully.

While the mixture is melting, crush your ginger biscuits until your have a fine powder and place to one side.

Pour the melted cacao butter (melted chocolate if using), and coconut oil into your blender along with the ground ginger, cacao powder, pinch of salt and maple syrup and blend until smooth.

Pour the truffle mixture into a bowl and place into the fridge for approx 1 hour, or until firm but NOT set.

Once firm, take out of the fridge and either using a spoon, small cookie scoop or a melon baller, spoon out each portion and roll into balls in the palms of your hands. The colder your hands are, the better for this part.

Roll the balls in your crushed ginger biscuit crumb and place back into the fridge to harden up again.
Your balls are now ready to eat, or gift to friends and family.

Vegan Gingerbread & Chocolate Truffles Recipe
Equipment
- 1 Large Bowl
- 1 Pan

- 60 mls Coconut Oil
- 3 Ginger Biscuits
- 2 teaspoons Ground Ginger
- 100 mls Maple Syrup (agave syrup also works well)
- 65 grams Cacao Powder
- Pinch of Salt
- 50 grams Chocolate Chips (optional)
Instructions

- While the pan is heating up, start by finely chopping your cacao butter into small chunks and place into the double boiler, along with the coconut oil and allow them to melt completely. If you're adding in chocolate chips, do so at this point and allow to melt fully.
- While the mixture is melting, crush your ginger biscuits until your have a fine powder and place to one side.
- Pour the melted mixture into your blender along with the ground ginger, cacao powder, pinch of salt and maple syrup and blend until smooth.
- Pour the truffle mixture into a bowl and place into the fridge for approx 30 minutes – 1 hour, or until firm but NOT set.
- Once firm, take out of the fridge and either using a spoon, small cookie scoop or a melon baller, spoon out each portion and roll into balls. The colder your hands are, the better for this part.
- Roll the balls in the crushed ginger biscuit crumb and place back into the fridge to harden up again.
- leave them for approx 30 minutes in the fridge to harden slightly – and enjoy!
How To Store Your Truffles
It is best to store your vegan truffles in an airtight container in the fridge.

The are best eaten cold from the fridge so leave them in there for as long as possible and avoid them being left somewhere warm.

Make Them Your Own
Here are a few different ways to make this vegan chocolate truffles recipe your own…
Peppermint
If you don’t like gingerbread, then perhaps you could add in some peppermint extract instead of the ground ginger and ginger biscuit crumb. Or, swap out the ginger crumb for crushed up candy canes to make them extra minty and festive.
Berries
Or perhaps leave them as plain chocolate and coat them in freeze-dried raspberries or freeze-dried strawberries to help cut through some of that richness. Plus, the bright red from the berries makes them look more festive than ever.

Coconut Balls
Another way to make them your own could be to roll the balls in some coconut flakes. This will make them more like bounty balls instead.
Coffee Lovers
If you have a coffee lover in the family, perhaps you could add in some espresso powder. Plus, the espresso will bring out more of the chocolate flavour as well.
White Chocolate
You could even coat these truffles in vegan white chocolate and then sprinkle the ginger biscuit crumb over the top. The colour contrast of the hard chocolate shell looks great, but it does make them super sweet!
