These blueberry and lemon crumble slices are bursting with flavour and personality. The oaty biscuit base is actually a mixture of oats and shredded coconut. You then have the gooey, blueberry, apple and lemon compote centre, holding it all together. It’s this middle layer that takes this vegan dessert to a whole new level of deliciousness.
Then topped off with crunchy crumble nuggets, rounding off the slices with the perfect texture combination. The perfect healthy dessert or snack when you need a little hit of sweetness.

Add Your Own Fruity Twist
What’s even better about these vegan slices is that you could swap out the blueberries for strawberries, raspberries – anything you like really. Or perhaps add some apple pieces to the blueberries for a quintessentially English crumble combination.
Any fruit you have that’s beginning to turn would be great to put in these crumble bars. However, i’m not sure how banana’s would work in this recipe, so perhaps stay to things more along the lines of – blueberries, cherries, apricots, peaches, raspberries, strawberries…etc

The Crunchy Topping
The crunch in these slices comes from the little nuggets on the top. The more nuggets you have, the crunchier they will be. The coconut oil hardens the little clumps in the oven, almost biscuit like. However, you don’t want to over do the oil as this will have the opposite effect.

Anything really, and it depends on your taste. Lemon goes really well as it gives the sweet and sharp combination. However, almonds, apples, elderflower are also great partners with blueberries.
Can You Use Frozen Blueberries?
Yes, you can use either frozen or fresh blueberries in this recipe. However, if you do decide to use frozen blueberries, you will need to boil for a little longer due to the extra liquid that will come out of them.
What Does Tossing Blueberries In Flour Do?
Tossing blueberries in flour simply helps them absorb some of the excess liquid, making them less likely to sink in things like cakes where the sponge is light.
What Are The Best Apples To Use?
In this recipe we use unsweetened applesauce with chunks of apple in. However, you could also use fresh apples such as gala apples if you want a sweeter apple. Or a granny smith apple if you wanted a sharper tasting apple centre.
Is Blueberry Crumble Vegan?
No, normally a blueberry crumble will contain butter to make the crumble topping. However, these crumble slices are made using oil to create the crumb topping instead so they are plant-based.

How To Thicken A Vegan Blueberry Compote
It’s actually very easy to thicken this vegan blueberry & apple jam. Simply add in corn starch while simmering on the hob which will thicken it up.
However, make sure you use it sparingly though as it will go from a liquid to a solid very quickly!

The recipe suggests to use 1 tablespoon of cornstarch, however, put this in perhaps a teaspoon at a time as it’s much harder to take it out should you put in too much.
How To Make These Blueberry, Apple & Lemon Slices
Start by pre-heating your oven to 190 C (Fan).

Split out the oats (100g each). Put one 100g into a blender or food processor to make it smooth like flour.


Then add in to the same blender the rest of the dry ingredients – oats, cinnamon, coconut sugar, coconut oil, water and shredded coconut – pulse, don’t blend. You are aiming for a crumble like consistency.

In a small tin, place 3/4 of the crumb, pushing down hard to form the solid base. The more you push it down, the harder the base will be. Once you have the base layer, cover and place in the fridge.

In a saucepan, add the blueberries, unsweetened applesauce, syrup, lemon zest & lemon juice. (You can use any syrup you like – agave, date, or even maple syrup work well in this recipe).
Simmer on a medium heat until the blueberries start to burst Make sure you keep stirring the mixture as it will stick to the pan.

Once the blueberry mixture has started to boil, add in the cornstarch and stir well. This mixture is ready when the sauce coats the back of a spoon in a loose jam texture. Then remove from the heat and set aside.
Once the fruit filling is ready, bring back your tray and pour in the sauce until it covers the base evenly. Do NOT touch the sauce as it will still be very hot!

On top of the blueberry layer, scatter the rest of the crumble mixture to form your crumble topping. You want this to be uneven so it goes crunchy in the oven so don’t press it down at all.

Once you’re happy with your crumble topping, sprinkle the other teaspoon of cinnamon over the top and bake in the oven for 35 minutes.
Leave to cool to room temperature in the tin and then move it to the fridge for at least an hour to harden further.

Then take it out of the fridge and cut it in to squares, or bars. It’s best kept in the fridge in an airtight container until you want to eat.

- 2 tbsp Coconut Sugar
- 1 tbsp Date Syrup Any syrup will be fine
- 1 Lemon (Juice & Zest)
- 2 tbsp Cornstarch Powder (heaped)
- 2 tbsp Water
- 200g Porridge Oats
- 40g Coconut Oil (melted)
- 2 tbsp Shredded Coconut
- 1 tsp Cinnamon
- 2 tbsp Unsweetened Applesauce (chunky)

Shelf Life
We recommend keeping these tasty treats in the fridge to make them last that little bit longer. They should keep for up to 7 days in the fridge. However, the earlier you eat them, the better they’ll be of course.

Recipe Notes
You could easily switch up this recipe by either changing the filling – perhaps apple and cinnamon to create more of an apple pie flavour combination. Or maybe even mixed berries would be great. Any flavours you know that work well in a crumble would work here too.
If you wanted some extra sweetness, you could add a sprinkling of brown sugar across the top before placing it into the oven for some extra crunch.
