Here in the UK we are still in lockdown (as I’m sure many of you are also in other countries) and on days like today (very wet and windy), it can be hard to find things to do to keep you occupied – so, incase you are in the same boat and in need of some inspiration, here is a delicious, 90% healthy, gooey refined sugar free chocolate chip cookies recipe to keep boredom at bay.
You can even make the dough in advance and either freeze it for a later date (when you can finally go and see other people), or just have it dry to go in your fridge for when the need for a cookie sets in!

Ingredients
- 275 grams self raising flour
- 75 grams cocoa powder or chocolate protein powder
- 150 grams unsalted butter
- 1 egg
- 200 grams date/coconut sugar
- Vanilla essence
- Chocolate of your choice – I used x2 Pacari Chocolate bars
- Pinch of salt
Method
- Pre-heat over to 200 degrees (fan)
- Cream the butter and sugar together until it goes a sightly lighter colour
- Add the egg and the vanilla essence and mix well.
- Sieve in all the dry ingredients (flour, cocoa powder, salt) and fold into the wet mixture. Once most of the flour has been mixed in, you can use mix with an electric mixer until fully combined.
- Add in the chocolate chips/chunks and mix well.
- Place the dough into the fridge for at least 30 minutes to harden – this will make it easier of your to make the cookies.
- Using your hands, roll the dough into large balls and place on a baking tray.
- Bake the cookies for EXACTLY 11 minutes.
- Once baked, remove from the oven and leave to cool for at least 10 minutes on the tray before moving or eating!


This mixture should make around x8 large cookies. Make sure you leave plenty of spare between each cookie as they will spread out.
