This red lentil & sweet potato recipe is a beautiful homemade soup that’s so easy to make. Perfect for making in large batches. Make it your own by adding or removing ingredients to suit your taste. It will take approximately 40 minutes to do from start to finish, perfect for a rainy Sunday afternoon. Most of that time is waiting for the lentils and vegetables to cook so it’ll only really take you a few minutes to prepare and serve. Do you love to make homemade soups?
It tastes so good, I bet you can get your vegetable hating partners eating this too! It’s so lovely and warming to have on a cold day. You get the slight heat from the chilli but, it isn’t spicy at all. It’s more a hint of warmth than spicy. I’m a wuss when it comes to spices and I love this. Obviously you can add more chilli if you want it to be a bit hotter.

Ingredients
- 1 tbsp coconut oil
- 2 Onions
- 3 sweet potatoes
- 4 carrots
- 4 Parsnips
- 4 Cloves of Garlic
- 1 Red Chilli
- 1 Teaspoon Coriander
- 125 grams red lentils
- Sea salt & freshly ground pepper
- 1 Litre of Vegetable Stock
- Tin of Light Coconut Milk
- 1 Lemon
Method
- Finely chop the onions and sweat in a pan until soft. Then add the garlic and chilli until golden brown.
- In your casserole dish, add the onions, garlic and chilli and add the red lentils and add in the vegetable stock, coconut milk and coriander and let simmer for 20 minutes.
- In another pan, add the chopped Vegetables and let them simmer for 20-25 minutes until the vegetables are soft. Once soft, drain and add these to the lentils.
- Use a hand blender to puree the soup or to blend down to your liking. If you prefer it a little bit lumpy, use the hand blender in blasts instead.
- Just before you serve, add the juice of the Lemon to the mixture and stir well. Serve the soup in a bowl with a lovely wholemeal bagel topped with butter for a delicious meal.
In fact, if you aren’t keen on hot drinks like Tea/Coffee but fancy having a mug of something warming, why not blend this down to a puree and put it in your favourite mug to have as your health alternative to a caffeine filled drink.
This is one of my favourite homemade soups to make and it’s so easy and simple to create. If you can chop vegetables and boil a pan of water, you can make this soup! I really hope you give this a go and enjoy it as much as I do.
