Equipment

  • Large Bowl
  • Whisk
  • Rolling Pin
  • Large non-stick pan
  • Paper towel (or kitchen towel)

Ingredients

  • 130 grams All-Purpose Flour
  • 130 grams Wholewheat Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking powder
  • 40 mls Oil (neutral flavour like olive, avocado, canola, sunflower)
  • 100 mls Warm Water

Instructions

To Make The Dough

  • In a large mixing bowl, mix together all of the dry ingredients - flour, salt and the baking powder.
  • Then stir in the oil with a spoon until a crumble-like mixture starts to form. The mixture should just be able to stick together if you pinch it.
  • Next, slowly stir in the water a little at a time until a dough ball forms.
  • Once you have your dough ball, tip it out on to a lightly floured surface and knead with the heel of your hands until it feels smooth.
  • Once you have the right consistency, divide your raw dough ball into 4 individual sections and roll into balls.
  • Then flatten each ball and return the disks back to your large mixing bowl and cover with damp paper towels.
  • For the best results, leave them to rest for at least 10 minutes before cooking.

To Cook The Dough

  • Once your dough has rested for at least 10 minutes, roll each disk out on to a lightly floured surface with a rolling pin, or you could use the bottom of a flat casserole dish.
  • You want to aim to roll your flat disks out as thinly as possible to get the best cooked consistency. The dough will try to spring back so press down hard while rolling them out.
  • Once you have rolled out all of your tortillas, set aside and start to warm a nonstick skillet pan over medium heat. (you may need to turn it up to a medium-high heat if your pan is not hot enough).
  • Once your hot pan is ready to go, place the first tortilla in the centre and cook for approximately 30 seconds on each side.
  • If you plan to have your tortillas right away, place your cooked tortillas under a kitchen towel to keep them warm.
However, if you want to have them cold later, simply place on a wire rack to cool so that they don't sweat on top of each other.

Notes

These should keep in the fridge for up to 3 days in an airtight container.
