Granola Bar Ingredients
- Almonds
- Coconut Oil
- Chia Seeds
- Poppy Seeds
- Almond Butter
- Unsweetened applesauce
- Dried Apple
- Granola
- Cashews
- Dried cranberries
- Pinch of sea salt
- Vanilla extract
Although this is the original recipe we used, you can make some changes to this list to create some different variations to better suit your taste.
What’s great about this recipe is that these simple ingredients can easily be changed. Perhaps next time you go to make them, change one element from the ingredients list and see if it’s something you prefer. We love that baking is all about being creative and thinking outside the box a little.
Liquid Sweeteners
For example, you could swap out the applesauce for any natural sweeteners of your choice such as – maple syrup, agave nectar, brown rice syrup…etc. Really any liquid sweetener would work just as well.
Change The Seeds
If you don’t like poppy seeds or chia seeds, you could swap these out for hemp seeds, pumpkin seeds or even sunflower seeds. Use whatever you have to hand, or the seeds you love the most. Just make sure you crush the bigger seeds down slightly before adding to the granola mixture.
Add Some Chocolate
If you wanted, you could add some of your favourite vegan chocolate to these basic ingredients.
Whether you add in dark chocolate chips to the granola bar mixture, or drizzle some melted chocolate over the top to create your own perfect snack.
Add Some Crunch
You could even add some extra crunch to your own homemade granola bars by adding some rice crispies, KoRo puffed amaranth or even buckwheat groats. (BECKY5 for 5% OFF)
All of which taste great in this recipe (tried & tested). However, it is better to add these in at the end and mix by hand so you don’t crush them all in the blender.
Mix Up The Dried Fruit
If you don’t like, or don’t have any dried cranberries, you could swap these for any dried fruit you do like.
Perhaps raisins, dried apricots, or even goji berries for an immune boost.
How To Make These Healthy Granola Bars
Line a baking tin with a sheet of parchment paper and put to one side. (It is best to do this in a square pan if you want to make bars, the ones from EveryMarket are of good quality).
Start by blending the almonds and cashews (along with any large seeds) in your food processor. You want them to be broken, but not turned into dust.

Then add the rest of the wet ingredients and the dry ingredients into your blender with the crushed nuts and pulse until it starts to come together as a sticky crumble-like dough.

If it’s not coming together, try adding a splash of water a little at a time until you get a consistency that sticks together.
Then tip out your granola mixture into the lined baking pan and press down quite hard to form an even layer.

Freeze for at least 2 hours, or until they are pretty hard.

Then take them out of your baking dish and cut. You can either cut these into bars, or smaller chunks for energy bites to have on the go.

- Food Processor
- Baking Tin
Ingredients
- 80 grams Almonds
- 20 grams Coconut Oil
- 10 grams Chia Seeds
- 10 grams Poppy Seeds
- 60 grams Almond Butter
- 50 grams Unsweetened applesauce
- 50 grams Dried Apple
- 130 grams Granola
- 30 grams Cashews
- 20 grams Dried cranberries
- Pinch of sea salt
- 1 teaspoon Vanilla extract
Instructions
- Blend the nuts into smaller pieces
- Add everything else into the blender and pulse until a dough starts to form
- Place the dough mixture into the lined tin and press down evenly
- Freeze for at least 2 hours
- Cut into bars or bite sized squares
- Keep in an airtight container
How To Store Your Own Granola Bars
The best way to store this great snack is in the freezer in an airtight container. They become quite sticky if left out at room temperature, or in the fridge so they are best kept in the freezer.
Plus, this way it means your granola bars will stay good for longer.
These bars will last for around 3 months in the freezer.
Recipe Notes
These bars are very sticky so if you wanted to make them more like crunchy granola bars, simply add more granola, and less of the liquid sweetener.
If you love peanut butter, instead of the almond butter, swap this out for peanut butter instead to make peanut butter granola bars.
Of course, you could also use cashew butter or sunflower seed butter instead if you’d prefer not to use almond or peanut butter.
