Ever since I saw a video of some one making banana bread that just looked delicious, I’ve been on the hunt for the best banana bread recipe I can find. There have been a few disasters along the way. However, this recipe makes an amazing banana bread. The best thing about it is you don’t have to be a good cook. You pretty much just throw it all in a bowl, and put it in the oven. I love it with a dollop of natural peanut or almond butter.
Ingredients
- 3 Ripe Bananas
- 3 Tablespoons Coconut Sugar
- 1 Egg
- 1 Teaspoon Salt
- Handful of Crushed Walnuts
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1 Tablespoon Apple Cider Vinegar
- 1 Cup (200g) Buckwheat Flour
- 2 Teaspoons Vanilla Essence
Method
Pre-heat the oven to 180c (fan)
- Mash the bananas together and add the vanilla essence, apple cider vinegar, egg, sugar and mix well.
- Add the dry ingredients in with the wet ingredients and blend until just mixed. Don’t over mix it!
- Then add the handful of walnuts and mix gently with a wooden spoon.
- Pour the mixture into your loaf tin and bake for 40 minutes.
- After 40 minutes, prick the cake with a sharp knife and make sure the knife comes out clean. If clean, your loaf is done and can be taken out of the oven. If the knife has mixture on it, put it back in the oven and check every 5 minutes until done.
- Once done, leave to cool in the tin for at least 30 minutes before removing and placing on to a cooling rack.
