This one-bowl vegan oatmeal and raisin cookie recipe makes gooey and delicious – similar in taste & texture to the ones you can get from Subway. Even if you aren’t vegan yourself, you’d never know they were vegan they taste so good.
Made purely with natural ingredients – you can even use water instead of a milk alternative to lower the calories and they taste just as good.
Refined Sugar-Free Oatmeal Cookies
These healthy oatmeal cookies are also refined sugar-free, using coconut sugar instead. But why use coconut sugar? Coconut sugar is a natural sugar, or plant-based sweetener so it’s less likely to spike your blood sugar levels than regular sugar and is a great sugar substitute.
Coconut sugar contains a small amount of inulin per serving. Inulin is a type of soluble fibre that’s less likely to spike your blood sugar levels. Meaning you won’t have that energy high, followed by a big crash afterwards. It also means you’re more likely to feel that natural energy for longer due to its slower release.
Of course, you can use normal sugar, or even an artificial sweetener if you wish to do so. Simply swap out the coconut sugar for the added sugar you wish to use in the same quantities.

Why Use Oat Flour For Cookies?
Oat flour is a great alternative to plain white flour, especially for those with celiac disease or gluten intolerance or sensitivity. Oats can generally be used by most people and oat flour is actually, naturally better for you than plain white flour.
The oat flour and oats I used in this recipe were these gluten-free rolled oats from KoRo. I had some leftovers from my morning overnight oats and they worked perfectly as both oat flour and oats for the cookies. (BECKY5 for 5% OFF)
Oat flour is also very easily made and can be made at home with a high-speed blender. To make your oat flour you simply place whole oats into your blender and mix until you get a fine flour consistency. Of course, the store-bought ones are made slightly differently, but if you’re in a bind, you can make your own in a matter of minutes!
Most store-bought oat flours will be stone ground, meaning the oats are crushed into a fine powder by stone. This means it will be less processed than plain white flour that goes through a much longer process to create.

The Sugar-Free Oatmeal Cookie Recipe
Oatmeal & Raisin Cookies (Vegan)
Ingredients
- 80g Raisins
- 60g Coconut Sugar (Or 1 tablespoon of unsweetened applesauce with a dash of maple syrup)
- 30g Coconut Oil
- 60 mls Almond Milk (Or Water)
- 100g Oat Flour
- 100g Old-fashioned oats
- 1/2 teaspoon Bicarb Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoon Baking Powder
- 1 teaspoon Nutmeg (Pumpkin pie spice also works well if you have this)
- 1/2 teaspoon Salt
- 1 teaspoon Vanilla extract
Instructions
- Heat the oven to 180 C
- Combine all the dry ingredients into a large bowl and make a well in the middle
- Add all the wet ingredients (including the dried fruits) into the well in the middle and mix lightly. The easiest way to do this is to combine with a wooden spoon
- You can make these cookies immediately once mixed. Simply spoon out the cookies onto the prepared baking sheet, leaving space for them to get bigger in the oven
- Bake for 7-8 minutes. They will still look slightly undercooked but you want that for the more chewy cookie texture
- Leave to cool completely on the parchment paper, or at least room temperature, on the cookie sheet, and enjoy!
Recipe Notes
These cookies will stay fresh for around 4 days if left in an airtight container. Move to the fridge if you live in a warmer climate or we have a heatwave in the UK. If you don’t have any containers, you can also cover them in plastic wrap, or beeswax wraps instead.
However, these sugar-free cookies so taste the best fresh, plus, they might not even last long enough to reach the fridge!
Nutritional Information – These sugar-free oatmeal raisin cookies are approx 80 calories per cookie, however, this will vary slightly on the serving size of your cookie. If you make 8, they should be approx 80 calories each.
Extra Cookie Options
If you don’t have raisins, you could use dried cranberries, which give them a lovely sharpness. Or, you could even add in a few dark chocolate chips as well, or instead of the raisins, or cranberries. The dark chocolate gives the cookies a subtle extra hint of sweetness – great if you are used to having brown sugar instead of the less sweet coconut sugar. Simply replace the raisins with chocolate chips to make oatmeal chocolate chip cookies.
If you want your cookies to be a little denser, or less gooey, try using coconut flour, or even whole wheat flour as this will dry them out more than oat flour does.
Another great little tip is to use any leftover mince meat from your mince pies instead of the raisins. The mince meat comes with the added flavour which elevates these cookies to a whole new level! Plus, you get to use up any leftovers from Christmas – if you still have any lying around.

If you decide to use the mince meat instead of the raisins, try adding 1-2 heaped tablespoons when adding the raisins in the recipe.
