Summer is finally here. The shorts are out. The Winter duvet has finally been put away and the windows can be left open all day! I get so excited for Summer to arrive. With gorgeous blue skies and the feel of the warm sunshine beating down on you. This also means it’s time for picnics, BBQ’s and amazing homemade Summer food. One of my favourite things to make in the Summer is homemade Ice Lollies and Ice Creams. They’re so simple and easy to make and there’s about a million recipes I’m dying to try out! This Summer I wanted to try this homemade apple and ginger ice lollies recipe. After testing it out a number of times, I wanted to share with you one of my, now favourite, recipes.

I found this recipe to be beautifully refreshing and although it isn’t a sugary sweet ice lolly, it is sweet from the fruit sugars which makes it an amazing, healthy treat to have on a hot Summer’s day. The apple is really nice and tangy and the ginger is somehow warming (not warming like the sun, warming as in comforting) and very calming. This really is one of my favourite ice lolly recipes now! I can’t believe how refreshing it is and soo tasty! I imagine something like this would be really good if you suffer from morning sickness or have an upset stomach and you could always make this from scratch yourself if you have a juicer and make it as gingery as you like.
This one is the Apple & Ginger Ice Lolly. This takes less than 5 minutes to put together and then the rest is waiting time as the lollies freeze in the freezer.
Ingredients
- Cawston Press Apple And Ginger Juice 1 Litre
- Bottlegreen Elderflower Cordial
- Ice Lolly Mould
- A freezer
That really is it!
Method
- Make sure your ice lolly tray is washed, clean and dry before using.
- Empty around half of the Cawston Press Apple And Ginger Juice into a large jug and add to it 20ml of the Bottlegreen Elderflower Cordial and stir together.
- Make sure you taste as you go, if it’s too string you can add more of the Apple & Ginger Juice to dilute the Elderflower Cordial.
- Add the mixture to the moulds. Make sure you don’t fill it to the top as when it freezes, it will expand slightly and you don’t want it to overflow in your fridge!
- Once moulds are filled, carefully place in the fridge for at least 5 hours (overnight if possible). Enjoy!
